Easy Vegan Banana Nut Bread Bites

Makes: 36+ Bites

For this vegan banana bread bites recipe, you will need:

½ c Coconut oil
½ c Granulated sugar
½ c Brown sugar
2/4 c applesauce
1 tsp Vanilla extract
1 ¼ c All purpose flour
½ tsp Cinnamon
Pinch of salt
2 tsp Baking soda
½ – 1 c Chopped nuts of your choosing
1 c Smashed bananas – Roughly 2 large bananas
Cake pop maker or mini muffin tin

How to make vegan banana bread Bites?

Preheat your cake pop maker if using one, or preheat the oven to 350 degrees if using a mini muffin pan.
Beat together the sugar and coconut oil until smooth and creamy.
Add the applesauce and vanilla extract to the butter and sugar mixture, and beat to combine.
Mix the flour, baking soda, salt, and cinnamon into the wet ingredients until just combined.
Fold in the mashed banana and chopped nuts.
If you are using a cake pop maker to create your banana nut bread bites, fill each compartment, close the lid and cook until done and browned. Continue to create new batches until the batter is gone.

 

Vegan Banana Bread Bites – Instructions For Mini Muffin Pan

If you are using a mini muffin pan instead, fill each greased cup about ⅔ of the way full, and bake for 10-15 minutes or until browned and cooked through. Continue to cook the batter in batches until it is gone.

Let the banana bread bites cool and serve immediately, or store in an airtight container.
